This week a hot topic with my clients has been getting in more protein and fiber at breakfast which lead me to develop this recipe! Remember the more delicious and fun you make your meals the more likely you are to stick with your diet. Check it and and let me know if you make it!
Ingredients:
4 eggs
2 cups of spinach
1 tbsp chopped onion
1 tsp minced garlic
1 tbsp oil olive
1/4 shredded cheese
4 corn tortillas
2 tbsp Greek yogurt
1 tsp taco seasoning
Guacamole
Recipe:
Blend eggs and spinach until evenly mixed
Sautee onions and garlic in olive oil
Add egg mixture to pan and scramble
Remove from heat, add cheese and cover for 1 min
Heat tortillas, add eggs and secure taco with tooth pick
Mix taco seasoning and yogurt
Plate tacos with a side of guacamole and yogurt dip
