The best meals are delicious & easy! A great place to start when you are new to meal prep is sheet pan meals. They are great as a grain bowl or added to a salad. Check out some of Dana’s favorite recipes!
Mediterranean Chicken from Feasting at Home
Dana's Recs: This is a great recipe as you are getting a great combination of flavors and a mix of animal and plan based protein. I would most likely have this in an arugula salad and add farro.
Sheet-Pan Chicken Fajitas
Dana's Recs: So often we feel like tacos/fajitas can't be healthy. Pepper, tomatoes and onions all count as vegetables! I would make some black beans and rice and make a burrito bowl with this recipe!
LEMON GARLIC TOFU
Dana's Recs: Remember that just like plain chicken, plain tofu is gross. You need to jazz it up and a recipe like this is a great one to make tofu a delicious meal! I love dairy and typically have yogurt in the house so I would personally use a dairy milk yogurt for the sauce.
Lemon & Rosemary Tofu with Potatoes
Dana's Rec: When it comes to recipes using fresh over dried will ALWAYS elevate the meal! With so many meals a great flavor combination will make any protein and veggie delicious!
Greek Lemon Garlic Salmon with Potatoes
Dana's Recs: Don't forget that cheese can be part of a healthy diet, but your portion size is important. This meal is a great example of adding a small portion of cheese for flavor without it adding excessive fat and calories. If I was having this for dinner I might adjust the recipe to add one more vegetable to the pan so I can a full balance of protein, carb and veggie.
Everything Salmon
Dana's Recs: This is a great recipe to use frozen broccoli for. To use frozen vs fresh you want to put the frozen broccoli in the oven/air fryer without any oil for 5 minutes to allow them to defrost and the cook per recipe. My favorite thing about using frozen broccoli is the no chopping and low price.
