6 Cucumber Salads to Try

A quick and easy veggie dish that makes the perfect companion to any meal! Cucumber salads are having their 15 minutes of fame– and for a good reason. This dish is extremely versatile and, depending on the ingredients, can take on new & refreshing flavors! Check out some of Dana’s favorite cucumber salad recipes here:


Sweet and Tangy Cucumber Salad

Dana’s Recs: This recipe is for you if you love all things dill pickles! It certainly gives that energy. I would most likely pair this refreshing dish with grilled salmon or perhaps some burgers on the grill. 


Creamy Cucumber Salad

Dana’s Recs: This recipe uses Greek yogurt which is a perfect alternative to mayo or cream cheese, which end up in a number of cucumber salad recipes. Greek yogurt is packed with protein helping to make this side dish more satiating. I would use non-fat or low-fat Greek yogurt, but full-fat Greek yogurt is still a better alternative to mayo and cream cheese.



Cucumber Salad with a Mediterranean Twist

Dana’s Recs: This is a great recipe as you are getting some additional veggies with the cucumbers and also adding in some plant-based protein with the chickpeas. Feel free to omit feta for a dairy-free option.




Asian Cucumber Salad

Dana’s Recs: Talk about flavor-packed! The garlic, ginger, rice vinegar, soy sauce, and more all lead to a delicious combo. I would likely have this recipe alongside a teriyaki chicken bowl or a Japanese-inspired rice bowl.







Cucumber Tomato Salad

Dana’s Recs: With a salad like this, I enjoy chopping my ingredients into small pieces to help bring each flavor into every bite! Adding fresh herbs will always enhance a meal, and adding fresh dill and parsley to this dish do exactly that!





Simply Dressed Cucumber & Mint Salad

Dana’s Recs: In this salad, along with the others, it may be a good idea to salt the cucumbers before prepping the salad. Chop the cucumbers, place them in a colander or bowl, sprinkle them with salt and let sit for 30 minutes. This will help reduce the moisture in the cucumbers, helping them to absorb more of the flavor from the dressing!
